Indian-Spiced Turkey Lettuce Wraps

INGREDIENTS:

  • 1 pound ground turkey OR beef

  • 1 medium onion, finely chopped 2 garlic cloves, minced

  • 1/3 cup mango chutney

  • 2 tablespoons liquid

  • 1 teaspoon garam masala

  • 1 package (12.70 ounces) Asian crunch salad mix or similar

  • 1/4 cup canned coconut milk

  • 12 lettuce leaves

  • 1 medium mango, peeled and diced

INSTRUCTIONS:

  1. Chop onion & any other vegetables of choice

  2. In a large skillet, cook ground turkey (or beef), onion and garlic over medium heat until protein is no longer pink and onion is tender, approximately 6-8 minutes.

  3. Break turkey/beef into crumbles; drain.

  4. Stir in chutney, liquid aminos and garam masala; heat through.

  5. Add salad mix (reserve packets); cook and stir until slightly wilted, about 5 minutes.

  6. Combine coconut milk and reserved dressing packet until smooth.

  7. Spoon mixture into lettuce leaves; sprinkle with contents from reserved toppings packet.

  8. Drizzle with coconut milk mixture and top with mango.


    SERVING SUGGESTION: Boiled jasmine rice
