Oatmeal Cookie Bites

INGREDIENTS:
160g rolled oats (gluten free)
100g crushed peanuts/pecan mix
1/2 cup honey or maple syrup
60g dark chocolate chips
100g dried cranberries
1/2 -2/3 cup naturally no stir peanut butter (adjust depending on the brand of peanut butter you use)
1 tsp vanilla extract
1 tsp cinnamon
INSTRUCTIONS:
Grind nuts in blender (if not already crushed) and transfer into a mixing bowl
Add oats, chocolate chips, dried cranberries, cinnamon and mix together
Add peanut butter and stir again
Add in honey just a little bit at a time, mixing between pours
Add vanilla then mix again ensuring everything is well coated and combined
Roll into small bite size balls and place on cookie tray (I put mine into mini muffin trays)
Let them freeze for 20-30 minutes then transfer into fridge
Serve & enjoy.

Can be kept in fridge for up to a week or freezer for up to 6 weeks- if they last that long!
