Peanut Chicken Salad
*Serves 4
INGREDIENTS:
2 c cooked and shredded chicken
1/2 head cabbage, shredded
2 carrots, shredded
4 scallions, sliced
1 mango, diced
1/2 bunch cilantro, chopped
Ginger Peanut Dressing
fresh or dried ginger
minced garlic
1/4 c honey
1/4 c olive oil
1/4 c rice wine vinegar
1 Tbsp peanut butter
1 Tbsp liquid aminos
1 tsp Sriracha sauce (optional)
INSTRUCTIONS:
To make the dressing, combine all dressing ingredients in a blender or food processor and process for 1-2 minutes, until smooth.
Seal in a glass container until ready to use
Wash, dice & slice salad ingredients and combine in large bowl
Before serving toss dressing with salad ingredients and serve by dividing evenly.

Add toasted peanuts + cooled boiled rice
