Apple Berry Oat Cups

Although I intentionally made these for my 18 month old son, our whole family enjoys them! So delish & the perfect addition to an outdoor spring picnic.

Store in an airtight container for up to 4 to 5 days, or make a few batches and wrap tightly and freeze for 2 to 3 months. Easier meal prep ever!

INGREDIENTS:

  • 1 1/4 cups old-fashioned rolled oats

  • 1 1/4 cups unsweetened applesauce

  • 1/2 cup nut milk

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 4 Tablespoons coconut oil , melted

  • 1/2 cup mixed berries

  • 1 teaspoon baking powder

  • 3/4 teaspoon baking soda

  • 1 teaspoon ground cinnamon

INSTRUCTIONS:

  1. Preheat oven to 375F.

  2. Line a 12-cup muffin tin with liners or grease with non-stick cooking spray. Set aside.

  3. In a medium bowl, stir together the oats, applesauce, milk, egg, berries, vanilla & coconut oil

  4. In a large bowl, mix the oats, baking powder, baking soda & cinnamon then add mixtures together until combined

  5. Spoon the batter evenly into the muffin cups.

  6. Bake for 15ish minutes or until a toothpick inserted in the center comes out clean.

  7. Allow to cool and enjoy (or freeze).
