Apple & Cinnamon Muffins

Both my husband and 14 month old toddler devoured these super simple (yet satisfying) muffins in no time at all. You’ll most likely have most of these ingredients too! If not, add to your next click & collect order, you won’t be disappointed!

Store in an airtight container for up to 4 to 5 days, or make a few batches and wrap tightly and freeze for 2 to 3 months. Easier meal prep ever!

INGREDIENTS:

  • 1 1/4 cups old-fashioned rolled oats

  • 1 1/4 cups unsweetened applesauce

  • 1/2 cup nut milk

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 4 Tablespoons coconut oil , melted

  • 1 cup whole wheat flour

  • 1 teaspoon baking powder

  • 3/4 teaspoon baking soda

  • 1 teaspoon ground cinnamon

INSTRUCTIONS:

  1. Preheat oven to 375F.

  2. Line a 12-cup muffin tin with liners or grease with non-stick cooking spray. Set aside.

  3. In a medium bowl, stir together the oats, applesauce, milk, egg, vanilla & coconut oil

  4. In a large bowl, mix the flour, baking powder, baking soda & cinnamon then add mixtures together until combined

  5. Spoon the batter evenly into the muffin cups.

  6. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.

  7. Allow to cool and enjoy (or freeze).
