Hulk Muffins

I originally made these muffins with my toddler in mind but after my husband tasted one, I knew I would have to make a second batch!

The addition of avocado + blueberries make these muffins a healthy snack & the maple syrup is the perfect sweetener!

INGREDIENTS:

  • 1 cup whole wheat flour

  • 1/2tsp baking powder

  • 1/2tsp baking soda

  • 1/2 ripe avocado (mashed)

  • 1/3 cup maple syrup

  • 1/3 cup olive oil

  • 1 egg

  • 1/4 cup milk of choice

  • handful of blueberries

INSTRUCTIONS:

  1. Preheat oven to 375F.

  2. Line a 12-cup muffin tin with liners or grease with non-stick cooking spray. Set aside.

  3. In a medium bowl, combine all ingredients and fold together. Do not over mix.

  4. Spoon the batter evenly into the muffin cups.

  5. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.

  6. Remove, serve & enjoy (or freeze).
