Simple Over Night Zo-Proats (zucchini protein oats)

A delicious & simply breakfast idea for you right here! If you’re like me...overnight oats never go out of season! Let’s face it, it’s quick to prepare, healthy & super versatile too- literally anything goes! Including zucchini! Yup, I said it. Try sneaking in some grated zucchini- you can’t taste it, yet it provides a full serving of greens.

Talk about the healthiest meal of the day!


*serves 1

INGREDIENTS:

  • ½ cup dry rolled oats

  • ½ cup zucchini, grated

  • 1 scoop Chocolate Whey or Vegan Shakeology

  • 1 cup frozen berries

  • water

  • OPTIONAL: peanut butter, DF choc chips

INSTRUCTIONS:

  1. Add grated zucchini, oats, water and berries into a small pot and bring to the boil

  2. Once soft, pour oat mixture between into a jar or sealable container

  3. Once cooled, stir in chocolate protein powder (add more water if necessary)

  4. Seal jar; refrigerate overnight.

  5. Before eating, top with your favorite things: more berries, banana, peanut butter, DF chocolate chips, coconut, anything goes!
