Slow Cooked Apple Cobbler

INGREDIENTS:

  • 2-3 red apple, peeled & diced

  • 1.5 tsp ground cinnamon
    0.5 tsp nutmeg

  • 0.75 cup milk

  • 1 tbsp butter, softened

  • 2 eggs

  • 1 tsp vanilla essence

  • 1.5 cup oats

  • 0.25 cup shredded coconut

INSTRUCTIONS:

  1. Toss apples in a large bowl with the cinnamon and nutmeg

  2. Place in lightly greased crockpot

  3. Combine milk, softened butter, eggs, vanilla and the 1/2 cup oats

  4. Spoon over apples in crock pot

  5. Stir to combine

  6. Combine remaining oats and shredded coconut and cover mixture in crock pot

  7. Place paper towel on top of slow cooker before adding the lid to soak up moisture and keep top layer of oats from becoming soggy!

  8. Cook on low for approx. 6 hours

  9. Serve & enjoy.

SERVING SUGGESTIONS:

  • Toss even more oats & coconut in coconut oil and bake for 12-15mins until crunchy to add a “granola” topping

  • Serve with honey, blueberries, brown sugar

  • Serve with milk (I think this is an American thing!)
