Peanut Chicken Salad

Because I just wanted the Northstar Thai Peanut Bowl, without having to leave my house.

This is it.

*Serves 4

INGREDIENTS:

  • 2 c cooked and shredded chicken

  • 1/2 head cabbage, shredded

  • 2 carrots, shredded

  • 4 scallions, sliced

  • 1 mango, diced

  • 1/2 bunch cilantro, chopped

    Ginger Peanut Dressing

  • fresh or dried ginger

  • minced garlic

  • 1/4 c honey

  • 1/4 c olive oil

  • 1/4 c rice wine vinegar

  • 1 Tbsp peanut butter

  • 1 Tbsp liquid aminos

  • 1 tsp Sriracha sauce (optional)

INSTRUCTIONS:

  1. To make the dressing, combine all dressing ingredients in a blender or food processor and process for 1-2 minutes, until smooth.

  2. Seal in a glass container until ready to use

  3. Wash, dice & slice salad ingredients and combine in large bowl

  4. Before serving toss dressing with salad ingredients and serve by dividing evenly.

  5. Eat and enjoy!

    SERVING SUGGESTIONS:

    Add toasted peanuts + cooled boiled rice
