California Roll in a Bowl

INGREDIENTS:

  • 2 c jasmine rice, cooked

  • dried sheets of seaweed, sliced

  • 1 avocado

  • 1/2 cucumber

  • crab stick

  • 1 scallion

  • pickled ginger

  • sesame seeds for sprinkling

Sriracha Mayo

  • 1 c mayo

  • 1 Tbsp sriracha sauce

  • 4 Tbsp rice vinegar

  • 1/2 tsp sugar

  • 1/2 tsp salt

INSTRUCTIONS:

  1. To make the Sriracha Mayo, whisk together the mayo, sriracha, vinegar, sugar and salt. Refrigerate until serving.

  2. Boil rice as package suggests and allow to cool

  3. Slice cucumber, crab stick, scallions, avocado & seaweed, separate into individual bowls.

  4. Add desired amount of sriracha mayo to each bowl

  5. Enjoy
