Meal Prep Tip: Plan for Leftovers!

When you’re planning your dinners for the week, choose a couple and think big! Make a dish that’s bound to end up with leftovers, like a big pot of chili, a hearty soup, or even casserole! For example last week in my Prep Party we made Thai Chicken Satay. Scott and I enjoyed it with rice and vegetables at dinner, then the next day we had it in lettuce cups for lunch and then threw the leftovers between bread to make a sandwich for Gray.

All too often, people get overwhelmed by meal planning because they think they need to make something different for every single meal each day. That’s just not the case! You simplify your life so much by incorporating leftovers into your meal plan. Or you could make it even easier by joining our weekly Prep Parties, just saying ;) But seriously, since starting them I haven’t had to make lunches or dinners all week long and it has been THE BEST. I know that when the weather warms up I will want to be spending even less time inside and taking planning, prepping and cooking out of my day frees up so much time!
